SPAZIO at CAPOFARO: making space for great sicilian cuisine - Appointments - Capofaro Malvasia & Resort

CAPOFARO will be the site of the “SPAZIO Ristorante Laboratorio” project from May 1st through the entire Summer 2014 season. The project is that of the Niko Romito Formazione School in Castel di Sangro in the province of L’Aquila. 
CAPOFARO’s kitchen will thus become a Gastronomic Laboratory open not only to the guests of the resort but also to anyone curious to rediscover the flavors of Sicilian tradition with lightheartedness, creativity, and technique.
Dishes will be prepared using essential products from the local land, following ancient recipes and the personal interpretations of the students of the Niko Romito Formazione School. The idea is to discover the energy, history, and culture of one of the most pristine and “natural” Mediterranean islands with a strong agricultural spirit and an almost ancestral relationship to the sea. A young team of professionals led by Enrico Camelio will work alongside the students in the dining room; Camelio has been collaborating with CAPOFARO for five years.
